Deb Perelman of Smitten Kitchen originally drew me into the world of food blogs and this soup is one of my favorites of her recipes. Without fail I’ve made it every winter for the past few years and used it lunches for days to come. It is nutritious and hearty while flavorful enough to keep you looking forward to it.
One thing to be aware of about this soup is that the sausage choice is critical so make sure to choose a sausage you like. I typically choose a favorite flavor of Trader Joe’s sausages (e.g. spinach, fontina, & roasted garlic chicken sausage). In addition, chard works best in this soup, but spinach or kale both work as a reasonable alternative if you’re looking for something easier to find or trying to use leftover produce….
